Ingredients
  

  • Elderberries – 2 kilos alternatively, frozen elderberries can be used if fresh ones aren’t accessible
  • Sugar – 1.3 kilos
  • Water – 5 liters
  • Wine Yeast – 1 packet
  • Lemon – 1 juiced
  • Wine Tannin – 1 teaspoon optional
  • Yeast Nutrient – 1 teaspoon optional

Instructions
 

  • Start by sanitizing all your equipment – cleanliness is next to wineliness!
  • Gently clean your elderberries, freeing them from stems and leaves.
  • In a large pot, bring the water to a boil then add your elderberries and sugar, stirring until all the sugar is dissolved.
  • Allow this mixture to cool before adding the lemon juice, yeast, tannin, and yeast nutrient.
  • Transfer the cooled mixture into a fermentation container and cover it.
  • Leave your wine to ferment in a cool, dark location for around three weeks.
  • Once fermentation has ceased, strain your wine to separate it from the solids, then transfer it to a demijohn for aging.
  • After approximately three months, your Elderberry Wine Recipe NZ will be ready to decant and relish!
