Ingredients
  

  • 5 cups of ripe elderberries
  • 4 cups of raw honey
  • Zest of a lemon
  • 1 tablespoon of lemon juice
  • 1 pack of fruit pectin

Instructions
 

  • Start by washing your elderberries thoroughly.
  • Using a large saucepan, combine elderberries, honey, lemon zest, and lemon juice.
  • Cook this mixture over medium heat, stirring it frequently until it starts to boil.
  • Add the fruit pectin to the mix, stirring well to ensure it’s blended properly.
  • Continue cooking the mixture, constantly stirring for about 15 minutes.
  • After achieving your desired jam consistency, remove the saucepan from heat and let it cool.
  • Sterilize your canning jars before pouring your elderberry jam in, and seal them properly.

Notes

For a thicker consistency, you can add more pectin.
For even dispersion of the honey and pectin, heat them slightly before adding to the berries.
You can replace lemon zest with a dash of cinnamon or vanilla for a flavor variation.
